I will share what I learned from the shiitake mushroom farm.
How you rehydrate dried shiitake mushrooms is key to make them delicious. The steps are not complicated, so I hope you will try this at home.
Before going to the steps, let’s make sure what we need. We only need three things: dried shiitake mushrooms, cold water, and Tupperware.
Then follow these five steps.
1. Gently rinse the dried shiitake mushrooms with cold water to get rid of any dirt.
2. Place the dried shiitake mushrooms in Tupperware and cover them with cold water.
3.Soak the dried shiitake mushrooms in the water.
4. Put them in the fridge.
5. Leave them in the fridge for a night.
(Better to leave them in the fridge for more than 10 hours.)
Easy steps!
It takes hours, but basically, you don’t have to do anything after putting them in the fridge. Just sleep and let them soak.
Soaking dried shiitake mushrooms in cold water for more extended hours makes them intensely flavored, amazingly firm, and velvety.
After more than 10 hours, take shiitake mushrooms out of the liquid and removes the stems.
Then shiitake mushrooms are all ready to be cooked.
Wait. Don’t throw the liquid away!
The liquid contains lots of nutrition and rich flavor, and this is an excellent dashi broth. When we, the Japanese, cook at home, we use this broth for miso soup, udon, simmered food, etc.
You can store this broth in the fridge for a week or freezer for a month.

I have mine in a jar of water in the fridge for over 2 week, is it OK to use it that way? They look and taste perfect…
Hello. over 2 weeks in the fridge… I am not sure…but I don’t recommend to use it. If you keep it in the fridge, it’s better to use it within a week. After rehydrating the shiitake mushrooms once, I usually take out the shiitake mushrooms. Then, keep the soup and mushrooms separately in the freezer. That way, it tastes good for a month.
